i can see your problem, breads without presevatives should stay soft for 4-5 days. on the 5th day, it will start to mold especially if the formula is lean.

now, your baker should know this, every master baker does. there are many reasons or factors that affect your shelf life, the formula, the baking method, the handling of the bread etc.,

the solution to your problem is very easy once you get to learn the techniques, in our class, we make 6 - 7 variations a day, almost 21 kinds of breads in just 3 days. that is enough for you to get some color and display value in your bakery. your baker should not be stingy in providing you with varieties of breads.

hello po.. i am a 4th year bs statistics student from davao city. may nagpapagawa po kasi sa akin ng study.. yung mga hrm students po.. their study po is about the utilization of pugon(ito po ba yung hearth oven na sinasabi mo?) in selected establishments here in davao city.. hmm.. ask ko lang po sana kung nakakatulong ba talaga yung paggamit ng pugon instead of those high-tech baking equipments?.. thank you po..

I JUST WANT TO SAY THANKYOU TO MY STUDENTS WHO HAVE SENT ME EMAILS AND CALLED ME TO SAY HOW THEY DO WITH THEIR SMALL BAKERIES, HOW THEY COPE WITH THE OPENINGS ETC., YOU DON'T KNOW HOW HAPPY IT IS FOR SOMEONE LIKE ME TO KNOW THAT MY SET-UP AND MODULE REALLY WORKS. IN 3 DAYS, THEY WERE ABLE TO LEARN ALL THAT IS NEEDED FOR THEM TO START BAKING AT HOME AND SELL BREADS AT THE SAME TIME. THIS IS MY GOAL AND I APPRECIATE ALL YOUR COMMENTS, MAY YOU LIVE FOR BREAD!!!! sorry i am located quite far from you and yes, i understand, most of my students who are also mothers find it hard to leave their kids at home. I WILL RESCHEDULE THE JUNE CLASS TO JUNE 21 24 AND 28 SO YOU CAN ADJUST IT TO YOUR SCHEDULE. PLEASE TEXT ME AT 09104642341 TO RESERVE A SLOT. IF YOU ARE WONDERING WHY THERE HAS TO BE AT LEAST A TWO DAY GAP BETWEEN EACH SESSION, FOR BEGINNERS THIS IS THE IDEAL SET-UP. I HAVE FOUND OUT THAT NOVICE BAKERS, THOSE WHO HAVE NOT HANDLED BREAD DOUGHS BEFORE FIND IT HARD TO ABSORB ALL THE DETAILS AT FIRST, SO THEY NEED EXTRA TIME TO SIT DOWN AND REVIEW THE LESSONS AT HOME. SOME BAKE AND BRING THEM TO CLASS DURING THE GAPS. THIS IS A MORE EFFECTIVE METHOD THAT I PREFER SO STUDENTS LEARN FASTER.
