you're right, the august schedule is on 15 18 and 21, a bit earlier than your desired date. however, if i do not get the minimum students required for the said session, i normally postpone for another week so wait for my email notification if this happens. regarding cakes and cookies, i do not have the time to do this class yet, i had so many requests just like yours but i just couldn't make time for it, sayang.

I plan to be in Manila from August 24-31, one week lang. I noticed you don't have a schedule for that week or have you made a new one? I'd like to take all of your courses for that 1 week. How much will you charge if I want to take 2 extra days to learn cake and cookie making, I can pay for the food cost. Salamat po.

thank you for the complement, i am satisfied with this guestbook, i like the fact that i can edit my postings if i mispelled a word, block out a guest if i want to and manage the whole guestbook pretty easy. even a beginner like me who have never used the internet before will not have a hard time at all.

i understand what you mean. i remember the first time i attended a baking class when i was around 19 years old that the teacher told us we should ask questions only when she was done with her demo. problem was, there was this girl who just couldn't help herself. in my class i have experienced this twice already. i have been teaching since 2001 and all of my students were fairly well mannered some of them became my friends. one in particular kept on "whining" in a way because she would always ask "ituturo mo ba yung ano...", "akala ko ba ituturo mo yung ano..." (at the same time saying "ang sarap sarap naman nito" when it was obvious that what she was asking was not listed in the website and many more. her classmates were obviously not happy with her boldness but that happens and what you do is that you try to distract her by asking about the recipes, whatever is in your mind. true, kawawa ang mga classmates nya dahil sometimes wala na sa lugar ang mga sinasabi nya so i in turn try to create a distraction also. i keep as calm as a clam smiling widely and treating it as just part of the job. good luck with your baking!!!

hi; i am just curious what do you do when for example you attend a baking class and one of your classmates is just plain rude and "garapal" interrupting the teacher, making demands etc., that it disrupts the class. i am asking this because i attended a baking class before and we find this girl irritating, asking the teacher if she will teach croissants and hopia, insisting that she tells the class how to make it when these recipes weren't part of the lessons. thanks! i hope to attend your class someday when i visit manila.

measurement of ingredients for yeast bread using hard wheat flour depends on the kind of formula or recipe you are making. all the ingredients have varying measurements from the yeast down to the water you are using, for example a plain hard wheat lean roll uses only 58% water and 4 % sugar with no eggs at all because you want the roll to be crusty. when you make a ciabatta, you now use at least 72 % water, still the same sugar and no shortening or fat at all, because the increase in waer brings the ciabatta its characteristic flattened shape and lighter open hole interior texture. in breadmaking, we use percentages (baker's percent) much easier but you have to learn it first in conjunction with the knowledge of the function and role of every ingredients. when you learn all these, you will have no problem making your own formulations.

sorry rose ann, i stopped teaching cakes and cookies due to the rising costs of ingredients. since my class is one on one, i would need to charge more than what the rest are charging to cover the food cost. if you want to learn at home just like i did when i was your age, buy rose levy beranbaum's book , the cake bible to teach you the basic, just make sure you have an oven thermometer (not the built in) but the kind you hang inside the oven to get you started on the right track. good luck!!!

oo, lahat ng klaseng pwedeng i bake pati chicken lechon or liempo ay pwedeng ibake sa oven na ito. ng binili ko itong oven ang sabi sa akin pang fruitcake lang daw, binili ko pa rin and nagamit ko sya sa cookie business ko and breads at mga cakes, ang ganda ng labas ng chiffon. may mabibili kang oven na ganito for as low as 8thou to 13 thou depende sa manufacturer.
